Think of summer, and sunshine and cold drinks al fresco spring to mind. Sadly, it can’t be summer every day in the Netherlands. Luckily though, these eight Amsterdam restaurants always offer a ray of sunshine – even if it’s pouring with rain.

Enormously delicious tacos, rugged 'Tarantino' building, extensive collection of tequila and mezcal... need we say more?

#1. Coba Taqueria

Ah, Coba Taqueria, how delightful you are! Firstly, because of the small menu featuring enormously delicious tacos. With five varieties on offer, you could do worse than order all of them, for a summer holiday on a plate! Secondly, because this rugged, somewhat hidden corner building in Amsterdam-North looks great: Mexico to the max. Or better yet, a Tarantino set, unpolished and decorated with cowhides, cacti and Madonna figurines. Finally, because of the extensive collection of tequila and mezcal. If your tequila knowledge doesn’t extend beyond what they serve in your local bar, then a whole new world will open up for you at Coba.

#2. Café-Restaurant Stork

Are you crazy about fish and seafood? Then head for Stork in Amsterdam-North. From Tuesday to Sunday, Stork is the place to indulge in the tastiest fresh fish dishes. Will you reel in a whole lobster, a plateau of fruits de mer with oysters, mussels and vongole, or the catch of the day? From the appealing terrace, you can enjoy a view of the northern banks of the IJ – sit here for a real holiday feeling, especially with the sun warming your face. If the weather disappoints, you can always dine inside the old industrial warehouse where the restaurant is located.

#3. Waterkant

Waterkant has a casual and relaxed atmosphere – which is no surprise, because the concept is based on the waterfront of Suriname. You’re right on the water here and it’s always pleasantly busy. Love Surinamese beers and snacks? Then true happiness awaits in the form of soato soup, baka bana, telo, cassava chips, buns with cod and gado gado. As they say in Suriname: super spang! And don’t forget to order a Surinamese Parbo beer – fantastic for washing down a roti with chicken. As well as beers, Waterkant also has a long list of cocktails. This amazing place is located under a Q-park parking garage, but oddly enough you really can’t tell when in the bar. You can come here whatever the weather – but make sure to arrive in time to get a spot.

#4. Nomads

Nomads wisely avoids relying on the Dutch weather by bringing its own warm climate to Amsterdam. The cheerful space, with one of the sunniest terraces in the city, is located in the Oostpoort, a new shopping centre on the edge of Amsterdam. Nomads is loved by the ‘well-travelled’: at Nomads the map travels to a different continent every month. Hence the name, of course. Nomads’ travel map is both tasty and surprising. First stop? Peru. It’s our kind of country, but even if you’ve never been there you can taste the sun in the spicy (fish) dishes.

#5. Hannekes Boom

Located in the harbour and occupying one of Amsterdam’s loveliest spots is the restaurant Hannekes Boom – a great place for a drink and a snack. Whether you sit at one of the picnic tables or on the quay with your legs dangling over the water, it’s just lovely here. For lunch choose from various sandwiches and other dishes. The satay sandwich, made from turkey with coconut and peanuts and served with a tempeh salad, is a must. For dinner, a variety of fish, meat and vegetarian dishes is on offer, from sea bass to a vegetarian burger with guacamole. Something for everyone!

#6. Mossel & Gin

Near the Westerpark and like mussels? Then visit the awesome hotspot Mossel & Gin. Unusually, here mussels come in different, distinctive flavours. Why not try your mussels Thai-style, with truffles, with the French blue cheese Roquefort, or of course cooked the classic way. Help, choice overload! Besides mussels (a Dutch standard), they also serve kibbeling (fried fish bites), fish burgers and oysters. While you’re here, you should definitely grab a gin and tonic – they’re delicious, and anything but standard. At Mossel & Gin they use fine infusions to create authentic, irresistible drinks. Speaking of choice stress: you can order your drink as a half-glass, so you can try even more options! You won’t regret it. Enjoy your meal!

#7. Kop van Oost 

Fancy culinary snacks beside the water and – with a bit of luck – in the sun? Then dine at Kop van Oost, located behind the Brouwerij 't IJ windmill and the Javastraat in Amsterdam-East. Even in bad weather, you can’t go wrong. From the conservatory there’s a wonderful view of the water. For dinner, you can choose from the standard three, four or five course set menu. Rather choose the dishes yourself? No problem, à la carte is also good. The all-time classic is the steak tartare – choose the 90-gram or 140-gram version, with or without French fries. There are also delicious oysters from Normandy and much more. Don’t forget to book in advance, because this place is popular.

#8. Meneer Nieges

The gem that is Meneer Nieges is located on the Westerdoksdijk, within walking distance of Central Station. Stepping onto the large terrace on the water, you immediately get that summer feeling. Is it windy? Then take a seat inside, the view is just as nice! Oh yes, and while you're inside, take a look at the ceiling. This one is anything but boring with dangling airplanes and pretty plants. The menu is varied: from bavette with fennel and Béarnaise sauce to fresh truffle risotto and grilled tuna with basil oil. It’s also a great place for a cocktail. The espresso martini tastes extra special here, thanks to the lovely setting!
